With the Fall equinox approaching, celebrate late Summer fruits with angel food: a cake that's light, airy, and fluffy. In this hands-on class, you'll learn the technique that makes angel food cake so special: whipping egg whites to stiff peaks, and gently folding them into the batter without losing all the air. We'll make our toppings: a salted fig caramel, plum curd, and mascarpone whipped cream. In the end, you'll leave with new knowledge on making angel food cake, a few new topping recipes, and a mini cake to take home.
We are thrilled to have Emma teaching this class. Emma discovered her love of baking by spending weekends with her Dad testing new recipes and experimenting in the kitchen. An attempt at chocolate chip cookies using almond flour caused the cookies to spread like crazy. They turned out crispy, chewy, and caramelized in an unexpectedly delicious way. That happy accident is what hooked her: baking is an exact science, but that doesn’t mean you can’t bend the rules a little and see what happens. Now heading into her second year of pastry school at Clark Community College, Emma is falling even more in love with cakes and desserts. She is ecstatic to share her knowledge and spark your spirit of experimentation.
